Efo Riro is a popular Yoruba soup but enjoyed by many, it is really delicious and easy to make. It is cooked with various vegetables ranging from Ugu leaves, Efo Shoko (Shokoyokoto in Yoruba) and Efo Tete (African Spinach). Proper Efo Riro is cooked with Palm oil and doesn’t need Tomatoes. It can be cooked with Fish and Meat of choice but I’m using assorted Meat, Ponmo and Stock Fish, I am not a fan of dried black Fish so I do not add it. Use what you like when preparing this Soup.

INGREDIENTS FOR EFO RIRO

  • Assorted Meat
  • Efo Tete{ Blanched, i.e. add some salt and hot water to the sliced vegetable and allow for 2 minutes, strain, rinse with cold water and remove excess water by squeezing with your hand}
  • Ground Crayfish
  • Roughly blended Pepper mix [Red bell Pepper (Tatashe), Scotch Bonnets(Atarugu), Shombo (Cayenne Pepper)]
  • 1 Onion
  • 3-4 Maggi cubes
  • Salt to taste
  • Stock Fish
  • Ponmo (Cow skin) [cut into bits]
  • Palm Oil [5-6 tablespoons]
  • Locust Beans [Iru] {2 tablespoons}

PREPARATION

  • Place Assorted Meat and Ponmo on fire, add 3 Maggi cubes, salt, Onions, and water;[I like using marinated Meat].( I added the Ponmo at the beginning because I used Strong Ponmo so it had to cook well but You can add it later if it is soft Ponmo You’re using).Allow to cook very well
  • Add the Stock fish into the cooked meat and allow to cook for another 5 minutes then setting aside.

 

  • In a pot, heat up Palm Oil, add the sliced Onions, stir and allow to fry for 1 minute.
  • Now add in the Locust Beans [Iru] and fry for another minute.

 

  • Add in the blended Pepper mix, ½ stock cube and a pinch of salt and stir, fry until the water dries. [Remember We added 3 Maggi cubes in the Meat stock already]

 

  • Now pour in the cooked Meat, Ponmo, Stock Fish,Meat stock, ground Crayfish and stir

 

  • Cover the Pot and allow to cook until the water dries and the mixture thick.
  • Add the blanched Efo Tete and mix very well.

  • Simmer for 3 minutes and turn off the heat

 

  • Our Efo Riro is ready to be eaten with Pounded Yam, Wheat swallow, Eba, Amala even boiled Rice and Yam, Enjoy!
